Badam halwa recipe or Almond halwa – very rich, heavy Indian sweet recipe. It is usually made during festivals like Diwali, Holi, Raksha Bandhan and so on. Or it is made on special occasions as well.

This halwa is made from blanched and peeled almonds, milk, sugar and ghee. It is flavored with saffron and cardamom powder. The procedure is very simple and I have shared step by step pics which will help while you make this yourself.

Here I have blanched and peeled the almonds to make the halwa smooth looking. If you keep the peel on then halwa will look grainy.

1) Take almonds in a bowl. Pour about a cup of hot boiling water. And let it soak the almonds for at least 5 minutes.

2) Drain all the water and rinse it with cold water. Start peeling the almonds.

3) As we blanched the almonds it will be very easy to peel the skin off. It took me only 5 minutes.

4) Now take peeled almonds and milk in a blender.

5) And grind it into a smooth puree. You can keep it little chunky if you like.

6) Heat the ghee (clarified butter) in a pan on medium heat.

7) Once ghee is hot, add pureed almonds. And cook it with stirring continuously.

8) Keep cooking till all the milk or moisture gets evaporated and it starts to leave the sides of the pan. It took me about 10 minutes

9) Add saffron strands and mix it well.

10) Add sugar and mix. this sugar quantity works perfect for me. It gives medium sweet taste. If you like more sweet then you can increase the sugar accordingly.

11) Sugar will start to melt and halwa will become runny again.

12) Keep stirring and cooking till it starts to leave sides of the pan and ghee will ooze out. That time halwa is ready, turn off the gas heat.

I like to eat this halwa warm. As it cools it will harden up. Meaning you can spread on thali, once cooled completely you can make square or diamond pieces.

Serving suggestions: Serve as a dessert during festivals. This badam halwa is very rich, so 3-4 spoons of halwa per person is enough. It is usually served along with the meal.

Ingredients (1 cup = 240 ml)

  • ½ cup Almonds
  • 1 cup Water (boiling hot)
  • ½ cup Milk
  • 2 tablespoons Ghee (clarified butter
  • cup Sugar
  • few strands Saffron
  • teaspoon Green cardamom seeds powder
