Mango season is almost at the end. Here I am rushing to post all the mango recipes I made in last couple of weeks. After this mango pudding recipe, I have last one left to post is mango custard.

Many refers both mango pudding and mango custard are the same. For me, the texture is different for both because different ingredient is used to set.

Agar agar or gelatin is used for making pudding. Since this is vegetarian recipe blog, agar agar is used here. For making custard, eggs or cornstarch or custard powder is used. Pudding has slightly firm texture while custard has soft texture.

To make the luscious mango pudding, the amount of agar agar used is crucial. If used more quantity then it will set like a Jello. It is good texture but this is not we want today.

FYI, agar agar is also known as china grass. It is vegetarian substitution of gelatin.

Here I have used fresh mango puree. Instead you can use ready-made canned mango pulp too. If that is sweetened then you can reduce the sweetened condensed milk quantity accordingly.

As I have said many many times, please always go for less fibrous fruit.

1) Take agar agar flakes and using kitchen scissors cut into smaller flakes. Make sure to cut into small pieces so it will dissolve faster.

2) Take water and agar agar flakes in a small saucepan. Bring it to a simmer on medium heat. Let the agar agar dissolve completely.

3) Meanwhile on another stove, take milk and heavy cream in a saucepan. Bring it to a boil on medium heat.

4) Add sweetened condensed milk and stir well to combine.

5) Turn off the stove as soon as it comes to a boil.

6) Now that agar agar flakes have been dissolved completely. Turn off the stove.

7) Add that water into the milk mixture and immediately mix well. Let it cool for 5-7 minutes.

8) Now add mango puree.

9) Stir well to combine.

10) Divide the pudding mixture into individual serving bowls.

11) Cover it with the the plastic wrap and chill into the refrigerator for 5-6 hours or till it is set. If you shake the bowl gently, it looks set but in center it will be still wobbly. Once set, garnish with few chopped mangoes and mint leaves, enjoy!!

Serving suggestion: Serve this mango pudding as a dessert after the meal. This is easy and good make ahead dessert for your guests.

Notes:

  • Agar-agar mixture and milk mixture both should be hot when mixing. So cooking both on two different stoves at the same time. So both will be ready at the same time.
  • As soon as agar agar mixture cools, it will starts to become gelatinous. So you have to work quickly. As soon as it dissolves, add to the milk mixture.
  • Let the milk-agar agar mixture cool slightly, after that add mango puree and mix. Do not add into piping hot mixture.
  • If you find, your agar agar mixture is not dissolved properly, you can strain the mixture using fine mesh strainer and add into the milk mixture.

  • 2 teaspoons Agar agar flakes If using agar agar powder then use 1 teaspoon
  • cup Water
  • 1 cup Milk
  • 2 tablespoons Heavy whipping cream optional
  • ¼ cup Sweetened condensed milk
  • ½ cup Mango pulp or puree
