For green chutney :

boiled, peeled, sliced

Instructions
Preparation:
Boil the potatoes and beet in pressure cooker or steam then till soft.
While they are cooking make chutney. Grind all the chutney ingredients into smooth paste. Do not add too much water as we want thick chutney.
Now potato and beet are cooled, peel the skin and discard. Slice them evenly.
Then prepare rest of the veggies.
Before assembling sandwich, make sure you have all the ingredients ready.
Making bombay veg sandwich recipe:
Spread the butter generously on slices.
Now spread the mint coriander chutney on both slices.
drizzle some ketchup if you like.
Place potato slices and sprinkle sandwich masala.
then place cucumber slices and sprinkle masala.
Next tomato slices and masala.
Now arrange few onion slices and again sprinkle some masala.
Lastly arrange boiled and sliced beetroot with some masala.
Close the sandwich with another bread slice.
Cut into 4 or 6 pieces using sharp knife.
Drop the tomato ketchup and chutney on each pieces and sprinkle some masala and serve immediately.
