Dahi wale aloo recipe - boiled, cubed potatoes are simmered in spiced yogurt gravy. One of the quickest and easiest curry recipe using potatoes.

Dahi wale aloo recipe (How to make dahiwale aloo)

If you have boiled potatoes handy in the fridge, then this will be ready in 10 minutes only.

Besan is added into the yogurt gravy which will prevent the yogurt from curdling. Also it helps to make thick, creamy

To keep this healthy, I have added boiled, cubed potatoes. Instead you can shallow or deep fry the potatoes and then add into the gravy. Sure it will taste good.

Many times, I do make this simple version of dahi aloo for vrat, fasting.

Please keep in mind that as curry cools, potato will absorb some of the gravy. So serve hot or warm. If serving later then add some more water and keep thin gravy. By the time you reheat/serve, you will still have some gravy left.

I have used ghee while making it to add some rich flavor. If you want you can use oil too.
