Instructions
Take mango pieces, honey and coconut mint in a grinder or blender jar. Make a smooth puree out of it,
Add finely chopped mint leaves. Stit it with a spoon into the popsicle mixture. We like to bite into the strands of mint leaves, so do not blend, just stir.
Remove the mango popsicles mixture into a large measuring cup so it's easy to pour into the molds.
Fill the popsicle mold and pop in the sticks. Freeze it until set and frozen.
To remove the popsicle from the mold, run warm water for 30 seconds around the mold or dip it into a glass of warm water for 30 seconds. Then start wiggling and it should come right out.
Notes
You can grind the mint leaves if you don’t want to bite into the leaves while eating mango ice pops.
Add yogurt instead of coconut milk and it tastes just like mango lassi.
Want to use a wooden popsicle stick? Freeze the popsicles for about 30 minutes or partially freeze them. Then insert the stick so it stays in the middle of the ice pops.
