Poha upma is a South Indian breakfast dish made with poha aka beaten rice or flattened rice. Just like any other poha recipes, this is also QUICK and EASY to make. So the healthy, yummy breakfast will be ready in 15-20 minutes only.
1 ½cupsThick Poha (beaten rice),I am using red rice poha

½teaspoonUrad dal (split, skinless black gram)
½teaspoonMustard seeds
½teaspoonCumin seeds
1Dried red chilies,stem removed
2Green chilifinely chopped
½teaspoonGinger paste or freshly grated or crushed
8-10Curry leaves
¾cupRed onionchopped
2tablespoonsPeanuts
Saltto taste
2tablespoonsCoconut,fresh or frozen grated
2teaspoonsLemon juice
1tablespoonCilantro or coriander leavesfinely chopped
Instructions
Wash the poha and if required soak them. Depending on the type and quality of poha, soaking time may differ. So know your poha and adjust accordingly. Some poha does not need soaking like mine. In that case just wash and keep them moist in colander till needed.
Now heat the oil in a pan on medium heat. Once hot add urad dal and saute till they get light brown in color.
Then add mustard seeds. Once they pop, add cumin seeds and let them sizzle.
Add dried red chili, green chilies, ginger paste and curry leaves. Saute for a minute or so.
Now add onion, peanuts and salt. Mix well and cook till onions get soft and light brown.
Now add soaked, drained poha, grated coconut and remaining salt.
Mix gently very well and cook for 2 minutes covered.
Lastly add lemon juice and coriander leaves. Mix well and turn off the stove.
