Instructions
Preparation:
Wash the rice under running cold water till water runs clear.
Take that in a large bowl and add enough water.
Soak them for 15-20 minutes.
After the soaking time discard the water and keep it aside.
While the rice is soaking, prep all the ingredients. Chop the veggies and keep them ready.
Also prep the whole spices needed for pulav.
Making veg pulao recipe in pressure cooker:
Heat the oil in a pressure cooker on medium heat.
Once hot add cumin seeds and let them sizzle.
Then add whole spices. Saute for a minute.
Now add chopped onions, ginger paste, garlic paste and slit green chilies. Mix and saute till the onions get translucent or light pink in color.
Then add all the veggies. I have used tomato, green beans, carrot, potato, corn and capsicum.
Mix well and cook for 2 minutes.
Add salt, black pepper powder, kasoori methi and garam masala. Mix well.
Now add drained rice. Mix and cook for 2 minutes.
Add water. Squeeze the lemon juice.
Cover the cooker with lid, put the weight on. Cook on medium-high heat for 2 whistles.
Then turn off the stove. Let the pressure go down by itself and then open the lid.
Fluff up the rice using fork and serve
