Measure the raisins, figs and spices. keep it aside.
take apple juice in a sauce pan. Add butter and brown sugar.
Also add raisins, figs and ground spices (cinnamon, ginger and cloves).
Stir well and turn the heat on medium-low. Bring to a boil.
Once it boils, lower the heat to lowest and let it simmer for 7-8 minutes.
Turn off the stove and let it cool to lukewarm.
While it is cooling, Take all purpose flour, baking powder, salt and lemon zest in a bowl. Whisk well till everything is incorporated well.
Preheat the oven to 325 degrees F or 160 degrees C for at least 10 minutes.
Also grease the 9x5x3 inch loaf pan with butter or spray with nonstick spray. Line the pan with parchment paper.
Now the mixture is lukewarm, add fruit peel mix. Stir well.
Add vanilla extract and mix well.
Now add the flour mixture. Mix till everything is incorporated well. This is the thick batter If you think that batter is too dry then you can add more apple juice and mix.
It depends based on how much time and at what flame you have boiled the juice earlier, you may or may not need more apple juice.
Pour the batter into prepared pan. Even out the surface.
Bake into preheated oven for 50-55 minutes or till the toothpick inserted in the center comes out clean.
Remove from the oven and let the cake cool for 10 minutes in the pan.
Then remove the cake on the cooling rack and let it cool completely.
