Instructions
Preparation:
Wash moth beans or mataki under running cold water till water runs clear.
Add enough water and soak for at least 4 hours.
Discard the soaking water and drain the moth beans, keep it aside.
Making moth beans recipe:
Heat the oil in pressure cooker on medium heat. Once hot add cumin seeds and let them sizzle.
Then add onion and green chilies. Sprinkle some salt. Cook the onion till they become translucent.
Mix in chopped tomatoes.
Add turmeric powder, cumin powder, coriander powder and red chili powder. Also add remaining salt.
Mix well and cook for a minute.
Add soaked and drained matki. Stir well.
Add 1 ¼ cups of water.
cover the pressure cooker, put the weight on. and let it whistle for 5-6 times. Then turn off the stove.
Let the pressure go down by itself. Then open the cover. Check beans are cooked or not.
If cooked properly then squeeze lemon juice.
Finally add chopped cilantro and mix.
