Lauki Tamatar Sabzi Recipe

Lauki (Bottle gourd or Dudhi)
peeled and cubed

Cilantro or coriander leaves
finely chopped

Instructions
Heat the oil in a pan on medium heat.
Once hot add cumin seeds and let them sizzle.
Add chopped green chilies and saute for 30 seconds.
Mix in chopped tomatoes and Cook till they are soft and mushy.
Now add salt, turmeric powder, red chili powder, cumin powder and coriander powder. Mix well and cook for a minute.
Now add lauki and mix well.
Add water and stir.
Cover the let it cook. Do stir once or twice in between.
Cook till lauki is soft and tender, but not mushy.
Open the lid, if it is too watery then let the water boil uncovered for few minutes.
Then add chopped coriander leaves and turn off the stove.
Lastly squeeze in fresh lemon juice.
Stir well to combine.
