These coconut date energy balls are the perfect healthy, no-bake snack or treat. This coconut and date combo is amazingly delicious and they only take 10 minutes to make!
⅓cupDesiccated coconut+more for coating energy balls
15-18Datespitted (preferably Medjool dates)
2tablespoonsGhee (clarified butter)or coconut oil
Instructions
Take dry ingredients (almonds, coconut, chia seeds and cocoa powder) in a food processor jar.
Pulse it until are almost ground. The texture should be fine coarse.
Add pitted dates and ghee.
Again blitz it until everything comes together. Take a small portion and try to pinch it together, it should come together like a ball. Troubleshoot: - Mixture is dry: Add more ghee/coconut oil or simply add water. Add a teaspoon or two at a time. Pulse and see if needed more. - Mixture is wet and sticky: Add more powdered nuts or ready almond meal or powdered oats. You can add protein powder as well.
Take around 1 ½ tablespoons size of the mixture in your palm.
Start rolling into a ball.
Then roll the ball into the desiccated coconut to coat all the sides. This step is optional.

Type of dates: Any type will work as long as they are moist and soft (not dry). Personally, I prefer Medjool dates.Storage: It stays fresh for a week in an airtight container in the refrigerator. It can be frozen for up to a month.Substitutions:
Instead of almonds, you can use your choice of nuts like pecans, walnuts, cashews, peanuts.
Chia seeds are optional. You can use a flaxseed meal or sabja seeds.
To make it vegan, use coconut oil instead of ghee.
