Begin by rinsing the black beans in a colander under cold water. Rinse the beans until the water is clear.
Turn on the sauté mode on your Instant Pot. Once hot, pour in the oil and add the bay leaf.
Add the onion with a pinch of salt. Cook until the onion softens and turns translucent.
Next, add the garlic and sauté for a minute or two until fragrant.
Add the chipotle chili pepper, ground cumin, oregano, salt, and pepper. Stir and sauté for about half a minute.
Add in the rinsed black beans and pour water.
Secure the Instant Pot lid and set the valve to sealing. Pressure cook manually for 25 minutes. Naturally release the pressure before opening the lid.
Finish by adding the lemon and lime juices. Stir well, and serve. Enjoy!
Notes
When rinsing the black beans, repeat the process two to three times or until the water gets clear. It is crucial to get rid of all the impurities.
You can adjust the water quantity if you prefer your beans to be a bit more on the soupy side. If you prefer a bit dry black beans, you can reduce the quantity of water or cook the beans on high heat after they are done to get the desired consistency.
Adjust the quantity of chipotle chili pepper according to your heat preference. Add more if you love spice, or reduce if you are not a fan of heat.
Always opt for fresh lemon and lime juice for the best flavor. However, in the absence, you can also use either one or the other.
