Instructions
Start by preparing the vegetables. Wash them thoroughly. Remove the core of the green bell pepper and slice it. Slice the onion as well.
Place a cast iron pan over medium-high heat. Add oil.
Once the oil is hot, add the sliced red onion and green pepper.
Season with salt and oregano.
Stir and cook for approximately
10 minutes until the onions caramelize and the veggies achieve a tender yet crunchy texture
. Serve.
Notes
A cast iron pan is ideal
as it gives a slightly charred flavor to the veggies. However, a non-stick pan works well too.
Slice the onion and pepper to a medium thickness.
Thin slices tend to soften quickly and lose their crunch.
You don't want to overcook veggies,
or they will lose their crunch. So keep an eye on them and stir frequently.
