Add peanut butter, honey, vanilla, and mini chocolate chips.
Mix until well combined.
Using a cookie scoop or a spoon (approximately 1 ½ tablespoons in size), shape the mixture into smooth balls. Grease your palm with oil lightly before shaping.
Place the formed balls in a container and refrigerate for 30 minutes to set. Once set, they are ready to be served.
Notes
Mixture is Sticky:
Chill it in the fridge for about 10 minutes before forming the balls.
You can also add more oats to adjust the consistency of the mixture so you’ll be able to form the balls.
Mixture is Dry: Add a bit more honey or peanut butter to help bind everything together.
