    Eggless boiled fruit cake recipe - quick and easy to make Christmas fruit cake recipe. The perfect recipe for the last minute holiday bakes.

    This cake does not require the soaking of fruits like this eggless christmas fruit cake. Instead of that, dried fruits are simmered in apple juice. By this simmering/boiling process, fruits will plump up similar to the soaked fruits. hence the name is ‘Boiled fruit’ cake.

    Since there no soaking required, this fruit cake is very quick and easy to make. This is also known as bachelor’s fruit cake.

    The ground spices are added in the apple juice while boiling which gives the nice aroma of the spice.

    The texture of this eggless boiled fruit cake is soft and moist. This is not the dense cake like the usual fruit cakes are.

    1) take apple juice in a sauce pan.

    2) Add butter and brown sugar.

    3) Measure the raisins, figs and spices. I have here in the plate just to show you. At home you can just dump in juice.

    4) add raisins, figs and ground spices (cinnamon, ginger and cloves).

    5) Stir well and turn the heat on medium-low. Bring to a boil.

    6) Once it boils, lower the heat to lowest and let it simmer for 7-8 minutes. Turn off the stove and let it cool to lukewarm.

    7) While it is cooling, Take all purpose flour, baking powder, salt and lemon zest in a bowl. If you have used salted butter then leave out the salt.

    8) Whisk well till everything is incorporated well.

    9) Preheat the oven to 325 degrees F or 160 degrees C for at least 10 minutes. Also grease 9x5x3 inch the loaf pan with butter or spray with nonstick spray. Line the pan with parchment paper.

    10) Now the mixture is lukewarm, add fruit peel mix.

    11) Stir well.

    12) Add vanilla extract and mix well.

    13) Now add the flour mixture.

    14) Mix till everything is incorporated well. Please avoid overmixing. This is the thick batter If you think that batter is too dry then you can add more apple juice and mix. It depends based on how much time and at what flame you have boiled the juice earlier, you may or may not need more apple juice.

    15) Pour the batter into prepared pan. Even out the surface.

    16) Bake into preheated oven for 50-55 minutes or till the toothpick inserted in the center comes out clean. Remove from the oven and let the cake cool for 10 minutes in the pan. Then remove the cake on the cooling rack and let it cool completely.

    Once cake it cooled completely, slice it and serve.

    Serving suggestion: During the holidays like Christmas or during the winter season, serve this boiled fruit cake slice as a dessert.

    Ingredients  

    • ¼ cup Raisins
    • ¼ cup Black raisins
    • ¼ cup Dried figs chopped
    • 1 teaspoon Ground cinnamon
    • 1 teaspoon Ground ginger
    • ½ teaspoon Ground cloves
    • ⅓ cup Unsalted butter
    • ½ cup Light brown sugar packed
    • 1 ½ cups Apple juice
    • ¾ to 1 cup Fruit peel mix
    • 2 cups All purpose flour (Maida)
    • 1 tablespoon Baking powder
    • ¼ teaspoon Salt
    • ½ teaspoon Lemon zest from 1 lemon
    • 1 teaspoon Pure vanilla extract
