    Gajar suva sabzi recipe - a dry vegetable dish that is made from carrots and dill leaves with few basic spices.

    The slight sweetness of carrot goes perfect with the flavor of dill leaves. Also addition of amchur powder balances the sweetness.

    This is healthy, homey dish which tastes delicious and also looks beautiful on your dinner table.

    Dill leaves aka suva or shepu bhaji has many healthy benefits. It is good source of calcium which is good for strong bones. It is good for digestion. If you are on diet for weight loss than you should eat this, as it contains dietary fibers. Dill leaves are also good for diabetic people.

    Now I am following her footsteps. And I also make all of these dishes regularly in my kitchen.

    1) Heat the oil in a pan on medium heat. Once hot add cumin seeds and let them sizzle.

    2) Then add chopped carrots and mix.

    3) Add turmeric powder, red chili powder, amchur powder and salt.

    4) Mix well so all the carrots are coated with masala.

    5) Cover the pan.

    6) And cook it till carrots are 80% cooked.

    7) Then add dill leaves.

    8) Mix well. If it looks too dry then sprinkle some water and cover again.

    9) Cook till carrots are cooked all the way through.

    Subzi is ready to serve.

    Serving suggestion: This sabzi goes perfect with phulka roti. To make complete healthy meal, also serve dal, rice and kachumber on side.

    Ingredients  

    • 2 tablespoons Oil
    • 1 teaspoon Cumin seeds
    • 6 medium or 3 cups Carrot chopped
    • 1 cup Dill leaves (sephu bhaji or suva bhaji) loosely packed and chopped
    • ½ teaspoon Turmeric powder
    • 2 teaspoons Amchur powder (Dried mango powder)
    • 2 teaspoons Red chili powder
    • Salt to taste

    Instructions 

    • Heat the oil in a pan on medium heat.
    • Once hot add cumin seeds and let them sizzle.
    • Then add chopped carrots and mix.
    • Add turmeric powder, red chili powder, amchur powder and salt. Mix well so all the carrots are coated with masala.
    • Cover the pan. And cook it till carrots are 80% cooked.
    • Then add dill leaves. mix well. If it looks too dry then sprinkle some water and cover again.
    • Cook till carrots are cooked all the way through.
    • Turn off the stove
