Eggless buckwheat banana muffins recipe – made using buckwheat flour (kuttu ka atta), banana, butter and brown sugar.

The ingredients used in the recipe are allowed in Hindu fasting or vrat or upvaas. So these muffins can be eaten during the vrat or fast like Navratri, ekadasi.

These muffins are very soft, moist and spongy. The taste and texture will be different than regular muffins. Regular muffins are made with all purpose flour or wheat flour which has gluten in it. While this kuttu ka atta is gluten free. Hence it makes the difference in the texture. So set your expectation accordingly in terms of taste and texture.

During the vrat when you get bored of eating usual meal or breakfast. This is the welcome change to your palate.

I have not added any nuts here but if you like you can add walnuts or pecans or almonds or any choice of your nuts. Even you can add raisins.

How to make Eggless buckwheat banana muffins recipe :

1) Pre-heat the oven to 350 degrees F or 180 degrees C for at least 10 minutes.

2) Line a muffin tray with cupcake liners or lightly spray it with nonstick cooking spray or lightly grease it with butter or oil. Keep it aside.

3) Take buckwheat flour, baking soda and cinnamon powder in a bowl.

4) Mix it well and keep it aside.

5) In another bowl, take melted butter or oil. I have used butter.

6) Add light brown sugar.

7) Beat it well so it becomes creamy.

8) Add mashed banana and yogurt.

9) Again beat it and mix well.

10) Add dry flour mixture.

11) Mix it and halfway through switch to spatula to avoid the over mixing. If using nuts add them at this time and fold them in.

12) Divide the batter into prepared muffin tray.

13) Bake in preheated oven for 22-25 minutes. Check by inserting a toothpick in the center of the muffin, if it comes out clean then it is ready. Remove it from the oven and let them cool in the pan for 5 minutes.

14) Then remove it to the cooling rack and let them cool.

I have made them for the Navratri vrat, So it is made with minimal ingredients. If you are making it for regular day then you can add 1 teaspoon of vanilla extract for the flavor.

Ingredients

  • 1 cup Kuttu ka atta (Buckwheat flour)
  • 1 teaspoon Baking soda
  • ¼ teaspoon Ground cinnamon
  • ¼ cup Unsalted butter melted and cooled, ** or use OIl
  • ½ cup Light brown sugar
  • 1 cup banana mashed
  • ¼ cup Plain yogurt
  • 1/3 cup Walnuts or almonds or pecan, chopped, optional

Instructions

    Hi.. tried ur buckwheat banana muffins.. turned out really well.. my family just loved it.. thanks for the recipe.. can I replace buckwheat with amaranth flour.. will it taste good?
