Eggless buckwheat banana muffins recipe - made using buckwheat flour (kuttu ka atta), banana, butter and brown sugar.

Eggless Buckwheat Banana Muffins Recipe | Muffins for fasting, vrat

The ingredients used in the recipe are allowed in Hindu fasting or vrat or upvaas. So these muffins can be eaten during the vrat or fast like Navratri, ekadasi.

These muffins are very soft, moist and spongy. The taste and texture will be different than regular muffins. Regular muffins are made with all purpose flour or wheat flour which has gluten in it. While this kuttu ka atta is gluten free. Hence it makes the difference in the texture. So set your expectation accordingly in terms of taste and texture.

During the vrat when you get bored of eating usual meal or breakfast. This is the welcome change to your palate.

I have not added any nuts here but if you like you can add walnuts or pecans or almonds or any choice of your nuts. Even you can add raisins.

I have made them for the Navratri vrat, So it is made with minimal ingredients. If you are making it for regular day then you can add 1 teaspoon of vanilla extract for the flavor.

Serving suggestion: Enjoy it as a breakfast or snack.
