    Lauki Soup (Bottle Gourd Soup)

    Lauki soup recipe or Bottle gourd soup - Quick, healthy yet delicious soup recipe made with very minimal ingredients.

    I know lauki is not favorite vegetable for many. So when you heard the name lauki soup, you may not want to give it a try in your kitchen. But let me clear it, this soup tastes really good with very less spices added. Trust me and give it a shot.

    Addition of coriander sprigs really adds good flavor to the soup. Please do not skip it. Also sauteeing coriander seeds at the beginning also adds more flavor.

    This is healthy soup recipe as we are not adding any cream, butter or potato to make it creamy soup. Also this is very light on stomach.

    Step By Step Photo Instructions:

    1) Heat the olive oil in a pressure cooker on medium heat. Once hot add cumin seeds and coriander seeds. Saute for a minute, you will notice they are getting light brown color.

    2) Now add onions and garlic. Add salt.

    3) Cook till onions are translucent and pink.

    4) Now add whole wheat flour.

    5) Mix and cook for a minute with stirring constantly.

    6) Now add chopped lauki.

    7) Add water or vegetable broth whichever you are using. I have used water.

    8) Also add coriander sprigs.

    9) Cover the pressure cooker with lid, put the weight on. Cook it for 2-3 whistles. Let the pressure go down by itself then open the lid. Lauki is cooked and really soft.

    10) Now using hand blender, make smooth puree. If using blender or mixer, strain the liquid and grind the cooked lauki mixture into smooth paste. Pour back into the cooker with strained liquid.

    11) Check the soup consistency. If needed, add more stock or water. It was fine for me.

    12) Add freshly crushed black pepper.

    13) Also add garam masala.

    14) Stir well. If needed bring the soup to a boil.

    Serve this flavorful lauki soup hot or warm.

    NOTE: This can be made in pot/pan instead of pressure cooker. After adding water or broth let it simmer till bottle gourd is soft and tender (about 15-20 minutes). Then make smooth puree. You may/may not need to add little extra water or broth/stock

    Serving suggestion: Serve this bottle gourd soup with a piece of bread or baguette to make a light meal. The smaller portion can be served as a starter with few croutons.

    Ingredients  

    • 1 tablespoon Olive oil
    • ½ teaspoon Cumin seeds
    • ½ teaspoon Coriander seeds (sabut dhaniya)
    • ⅓ cup Red onion chopped
    • 1 large clove Garlic
    • 1 tablespoon Whole wheat flour (Chapati atta) or all purpose flour
    • ½ of medium or 2 cups Lauki (bottle gourd or dudhi) peeled and cubed
    • 1 ½ cups Vegetable stock or water
    • ¼ cup Cilantro or coriander leaves
    • Salt to taste
    • ¼ teaspoon Black pepper powder
    • ¼ teaspoon Garam masala

      This was really excellent. It does need a fairly good amount of salt. And don't skip the garam masala powder... it really brings out the flavor. As a soup it was delicious but I am sure it would taste great as a light curry with some brown rice. Thanks for the recipe Kansan. I can't wait to have the leftovers.5 stars
