    Palak soup recipe (Spinach soup)

    Palak soup recipe or spinach soup is very healthy and nutritious. I have made it little creamy still it is low in calorie unlike other creamy soup.

    In this spinach soup, milk is added which makes it very lightly creamy. soup is spiced with green chili and black pepper powder. So use it as per your liking spiciness.

    This is Indian style palak soup unlike cream of spinach soup which has lots of butter and heavy cream. This soup is very light on stomach that you can have it as a starter.

    As you know that spinach is very nutritious leafy vegetable that one must include it in their diet. In my family palak is staple leafy vegetable after methi leaves and thus you will find many spinach recipes here. e.g. aloo palak, palak rice, dal palak, palak paneer paratha, Palak raita.

    In my family any kind of soup is very rare dish except indo-chinese soup as we are not fond of it, so whenever I make soup, I make sure that it tastes the best otherwise I will have to throw it which I don’t like. So if I share a soup recipe here means it is approved by my hubby (who hates soup) and it tastes just fantastic that you must try it once.

    1) Take onion, tomato, green chili, ginger and garlic in a deep pan or patila.

    2) Add water, turn the stove on medium heat and let the water come to a boil.

    3) Once it starts to boil, let it cook for 10-12 minutes. By this time onions and tomatoes will get soft and cooked.

    4) Add washed spinach leaves. NOTE: I do not mind keeping the stalks of spinach, I did clean them properly and did remove the very dirty and wilted one.

    5) Let the spinach get wilted for about 2-3 minutes. Turn off the stove and let the mixture cool down for 5-10 minutes.

    6) Then make the smooth puree of it into the blender.

    7) Heat the ghee in a pan on medium heat. Once hot add grated garlic and saute for a minute or till the raw smell of garlic goes away.

    8) Then add pureed mixture. Add water if needed as per your liking.

    9) Add salt and pepper.

    10) Let it simmer for 5 minutes.

    11) Lastly add milk.

    12) Bring it to a boil and turn off the stove.

    If making it for kids then skip the chili and pepper powder. Make this palak soup in your kitchen and please let me know how you like it.

    Ingredients  

    For boiling and grind into paste:

    • ⅓ cup Red onion chopped
    • ½ cup Tomato chopped
    • 1 small Green chili
    • ¼ inch Ginger
    • 1 clove Garlic
    • 1 ½ cups Water
    • 2 cups Spinach (Palak) packed

    For palak soup recipe:

    • 1 teaspoon Ghee (Clarified butter)
    • 1 teaspoon Garlic paste or freshly grated
    • Salt to taste
    • ¼ teaspoon Black pepper powder
    • ¼ cup Milk

    Instructions

      We enjoyed this recipe. I followed the recipe except for substituting oil for ghee and coconut milk for dairy milk, and adding some lime juice just before serving. My husband usually doesn't like spinach soup and he finished his bowl.4 stars
