Pizza recipe using whole wheat flour
Pizza recipe using whole wheat flour – The base or crust of pizza is made from whole wheat flour aka chapati atta. This is the HEALTHY alternative to the regular all purpose flour crust.
I have already shared the regular veg pizza recipe where the base is made from all purpose flour aka maida. This time I am sharing whole wheat pizza dough.
This recipe will give light, fluffy pizza crust with crisp edges. We are brushing the crust with olive oil before baking which helps to get nice golden color and also helps to crisp up.
For the pizza sauce, here I have used my homemade tomato pizza sauce which is made from fresh tomatoes. While the dough is rising, make the sauce. This will take only 20 minutes.
For the pizza toppings I have used onion, jalapeno peppers and roasted red peppers. For roasted peppers, I took the red pepper and roasted on open flame till the skin is charred and black all around similar to this roasted red pepper soup. Once cooled, I removed the skin, stem and seeds. Then sliced into long strips.
Other alternatives for toppings are corn, capsicum, olives, mushrooms etc.
How to make whole wheat pizza recipe (Step by Step Photos):
1) Take whole wheat flour, salt, olive oil and honey in a food processor with dough attachment. You can use stand mixer to knead the dough or do it by hand.
NOTE: if using instant yeast then add directly into the dough. If using active dry yeast then dissolve in warm water and rest for 10-15 minutes. Once it gets frothy, use this water to knead the dough.
2) Pulse it till everything is combined.
3) Add water. Start will less amount of water and gradually add more water as needed.
4) Run the food processor till you get nice smooth dough. If kneading by hand then make sure to knead it very well till it is smooth. So you will get light and fluffy crust. Otherwise you will end up with dense crust.
5) Take a big bowl and grease it with oil all around. Take smooth dough ball and put inside the bowl. Brush the surface of the dough with oil.
6) Cover the bowl with plastic wrap and let it rise in dark, warm place for 1 ½ to 2 hours.
7) While the dough is resting, make the pizza sauce.
8) Also prepare the veggies for toppings. Also grate the cheese and keep it ready.
9) When start rolling and assembling the pizza, pre-heat the oven first. Preheat the oven to 450 degrees F or 230 degrees C for at least 15 minutes.
10) Line a baking dish with aluminium foil and keep it aside.
11) After the resting time, the whole wheat pizza dough will get more than doubled in size.
12) Punch it down and divide into three equal portions.
13) Now roll into 6 inch diameter circle, the thickness of the crust is medium. Brush the surface generously with olive oil.
14) Now place the rolled pizza, oiled side down on prepared tray. Again brush the other surface with oil.
15) Bake into preheated oven for 7-8 minutes. After 8 minutes you can see the base starts to brown and cook. (The pic shown is the bottom surface)
16) Spread around 3-4 tablespoons of pizza sauce on top.
17) Sprinkle the topping evenly.
18) Also spread the cheese.
19) Again bake into the oven for 6-7 minutes.
20) Transfer it to a rack, slice and serve.
Serving suggestion: Enjoy this veg pizza as a meal. Keep in mind that whole wheat pizza is little on heavy side. Have some fruit juice or fizzy drink on side.

Hi Kanan…I tried pizza base mentioned by you. it tasted good….but dough was not strechy. can you tell me what must have gone wrong…. dough raised double in volume…
That is right. you have not done anything wrong. the reason behind is – Whole wheat flour (atta) has less gluten compared to all purpose flour (maida).
