- Not recommended brands:
- Hunts (makes the sauce tangy or sour)
- Cento (adds a slightly bitter note)
- San Marzano tomatoes (my favorite for other Italian recipes, but it makes the sauce too thin and the pizza soggy).
Sugar and Salt: Sugar balances the acidity of the tomatoes and ensures it doesn’t overpower the sauce. Salt enhances the overall flavor profile of the sauce.

Only difference is addition of fresh basil leaves.
