    Spaghetti with spicy tomato sauce recipe

    Spaghetti with spicy tomato sauce - This is the fusion dish with Indian touch on Italian Pasta recipe. I am saying this because this spicy sauce is made with Indian spices.

    Here I have used whole wheat spaghetti. You can use regular as well. Or substitute with any other pasta like penne or macaroni.

    You can adjust the spice level by adjusting the chili powder quantity. Below quantity will give you medium spicy taste.

    I do like traditional Italian pasta recipes, but when I saw the recipe on 660 Curries Cookbook about a year ago I wanted to try it out.

    Oh boy it was heavenly delicious. Since then I have made it many many times. The result is medium spicy, flavorful Spaghetti recipe.

    1) Cook the spaghetti as per package instruction or follow this: bring about 4-5 cups of water to a boil, add big pinch of salt. Once water starts boiling, add spaghetti into it. Keep them whole, do not break. as it cooks it will settle down in the boiling water. Let it cook for 8-10 minutes or till al dente.

    2) NOTE: Boiling pasta and making sauce, do both tasks simultaneously. Keep all the ingredients ready for tomato sauce, add pasta to the water and on other stove start making sauce.  Both will be ready at the same time and mix them together.

    3) Heat the oil in a pan on medium heat. Once hot add cumin seeds and let them sizzle, add dried red chili and sauté for 30 seconds.

    4) Add onions and cook till it becomes translucent and soft.

    5) Add freshly grated ginger and garlic with tomato paste.

    6) Mix and sauté for 30-40 seconds. If adding tomato puree then cook for 2-3 minutes.

    7) Add spices (red chili powder, garam masala) along with salt and sugar.

    8)  Mix immediately.

    9) Add 1 cup of water. And let it comes to a boil.

    10) Simmer to for 5-6 minutes or till it gets thick.

    11) Sauce should be really thick.

    12) Then mix in chopped tomatoes and let it get heated through, it will start releasing its water and starts to soften. Do not cook tomatoes too much; they should be just barely soft.

    13) By this time spaghetti should be cooked, drain the water. Add chopped cilantro to the sauce.

    14) Mix in and turn off the stove.

    15) Add drained spaghetti.

    16) Toss well in the sauce and serve.

    Serving suggestion: Serve as a dinner/meal with side of soup or salad and piece of bread/toast.

    Ingredients  

    Cooking pasta:

    • 230 grams or ½ pound Spaghetti
    • 4-5 cups Water

    For spicy tomato sauce:

    • 1 tablespoon Oil
    • ½ teaspoon Cumin seeds
    • 1 Dried red chilies
    • ½ cup Red onion finely chopped
    • 1 ½ teaspoon Ginger paste or freshly grated or crushed
    • 1 ½ teaspoon Garlic paste or freshly grated
    • 2 tablespoons Tomato paste **Instead use 1 medium tomato pureed.
    • 1 teaspoon Red chili powder
    • ¼ teaspoon Garam masala
    • 1 cup Water
    • 3 medium or 2 cups Tomato finely chopped
    • ¼ cup Cilantro or coriander leaves finely chopped
    • Salt to taste
    • ½ teaspoon Sugar

    Instructions

        Regarding the platform, it depends. If you want to blog just for fun and as a hobby, then go for free platform.
        But if you want to make money and consider your blog as professional work then please I highly recommend going paid platform wordpress.org.
        Keep in mind, wordpress.com is free while wordpress.org is paid.
        There are few online resources, groups that will help you to understand how blogging works and will help you if you have confusion.

        I occasionally use Barilla brand pasta. Sometimes get the packets of organic pasta from whole foods (their own brand).

      instead of garam masala(if you do not like masala taste) use coriander powder
