    Sweet corn soup recipe - it is very easy to make and made with very minimal ingredients.

    This is home style, healthy and comforting soup recipe. The main ingredient is American sweet corns.

    To spice it up I have used sliced green chilies. It gives just touch or hint of spicy taste.

    Corn flour or cornstarch is added to make the soup thick. Other than these, only salt and pepper is used to season the soup.

    This sweet corn soup has full of corn flavors. Because no other flavoring is added. Also I have used the water not vegetable stock. So the corn flavor is coming through the soup.

    If you want to make the soup slightly creamy, you can add little milk or cream in it.

    This is not the indo chinese style veg sweet corn soup where green onion or celery or other vegetables are added. This is simple sweet corn soup. I have adapted this recipe from a cookbook written in Gujarati language.

    1) Take corn cobs in the pressure cooker, add enough water so they are submerged in the water. I am using the small cooker, so I have cut the cobs into half. Cook it on medium heat for 2-3 whistles. Alternately you can steam them.

    2) Drain the water and let it cool down to touch.

    3) Now remove the corn kernels. I usually run the knife vertically. This is quick and easy method and always works for me.

    4) Do the same for all the corn.

    5) Save ¼ cup of corn kernels whole and keep it aside.

    6) Make the smooth puree into grinder or blender from the rest of the corn.

    7) Take the puree into the pan. Turn the heat on medium

    8) Add water. I have added water to the blender jar and swirls the jar few times, added this water to the pan. So I don't have to waste anything.

    9) Mix it well and Bring it to a boil.

    10) While it comes to a simmer, other side mix the corn flour and 1 tablespoon of water. and make the thick slurry. Keep it aside.

    11) Now the soup has come to a simmer. Add sliced green chilies. If you don’t want to bite into chilies, you can add slit green chili.

    12) Mix well.

    13) Add salt and pepper.

    14) Stir well and let it simmer for 2 minutes.

    15) Then add corn flour mixture. Stir the mixture once before adding, because cour flour may have settled down at the bottom.

    16) Let it simmer for 5 minutes. Or till the soup has thickened.

    17) Lastly add the reserved corn kernels.

    18) Stir well and turn off the stove.

    Corn soup is ready to serve. Serve hot.

    Serving suggestion: Serve the sweet corn soup as a starter. This soup cannot be paired with baguette or bread.

    Ingredients
