    Mango Mint Green Smoothie

    My favorite mango mint smoothie recipe is vegan, healthy yet creamy, and full of tropical flavors. It requires only 4 ingredients + a blender. You’ll instantly be hooked this summer!

    We love it as breakfast when in a rush. It’s quick and easy, perfectly filling and satisfying, and just deliciously good. It keeps full till lunch-time. Who knew that healthy could taste so good?

    You’ll need 4 ingredients:

    - Mangoes: When in season, I would surely use the fresh ones (but chopped and chilled in the refrigerator or frozen). But you can use bagged frozen mango as well. This one here I have used frozen ones from Costco. Frozen cubes make smoothie chilled and thick.

    - Mint leaves: It adds refreshing fresh, cooling minty flavor, perfect for summer days. It takes the smoothie the whole new level. Add more or less depending on how strong or mild you like mint flavor in this mango mint smoothie. 

    - Spinach: It makes the smoothie nice and green. I am using pre-washed baby spinach leaves. The great thing about this healthy mango green smoothie is that there is no spinach flavor. You won’t believe how the fruit hides the flavor of the spinach even though we are adding plenty ~ packed 2 ½ cups of it.

    - Coconut milk: It makes the green smoothie creamy and flavor complements well with mangoes and mint. It increases the tropical flavor. Here I have used light coconut milk. Please I highly recommend using chilled coconut milk (not room temperature one).

    Expert Tips:

    • Make sure to pack the spinach leaves while measuring to make the green smoothie. If you add less than the color won’t be appetizing.
    • Make sure to use frozen mango pieces to get a nice and chilled smoothie.
    • Also, use chilled coconut milk. 
    • If your mangoes are not sweet enough then you can add some honey or maple syrup for sweetness.
    • Serve mango mint smoothie right away to get the best fresh flavors. I don’t recommend making ahead of time.

    Ingredients  

    • 1 ½ cups Mangoes frozen cubes or fresh mango chopped
    • 1 ½ cups Coconut milk Preferably light
    • 8-10 Mint leaves
    • 1 ½ cups Spinach (Palak) Packed

    Instructions 

    • Place all the ingredients into the blender. Always start with liquid, in this case coconut milk. Then add mangoes, mint leaves, and spinach leaves.
    • Blend it till everything is smooth.
    • Pour into two individual serving glasses. Enjoy immediately to get the best fresh taste of the smoothie

    Notes

    • For sweetness: You can use honey or maple syrup. But my mangoes were sweet enough so I have skipped.
    • Add more or less mint leaves depending on how strong or mild you like mint flavor in this mango mint smoothie.

      Delicious when I added about a half a teaspoon of granulated vitamin C and a pinch of salt along with some Stevia. 😄5 stars
