    Rava uttapam recipe

    Rava uttapam recipe (Sooji uttapam recipe) - This is quick, easy and simple to make instant uttapam recipe. These are made from semolina and topped with few vegetables.

    When it comes to the instant uttapam recipe, other than this one I do make instant oats uttapam. The method for both are similar.

    The batter is made by adding yogurt. I would prefer to use slightly sour yogurt to get the BEST taste. If your yogurt is not sour then add few drops of lemon juice. Then it is rested for 20 minutes.

    Since this batter is not fermented, we are added little amount of baking soda. This makes rava uttapam soft and fluffy.

    Here I have topped them with mixture of onion, tomato and capsicum. Instead of sprinkling them on top, you can mix that in batter just like we do for cheela or puda. Either way it tastes good.

    How to make rava uttapam recipe?

    1) Take sooji in a bowl. Add salt, pepper and grated ginger.

    2) Stir well to combine.

    3) Add yogurt.

    4) Mix well and it will be like a thick paste.

    5) Add water.

    6) Stir till you get the smooth batter. Cover it and let it rest for 15-20 minutes.

    7) Meanwhile let’s prepare the vegetable mixture. Take all the chopped vegetables along with green chilies and coriander leaves in a bowl.

    8) Mix well and keep it aside till needed.

    9) After the resting time, check the consistency of the batter. It should be thick yet runny. If sooji had absorbed more water then it might get thick. In that case, add little water and adjust the batter consistency.

    10) At the time of making sooji uttapam, Heat the cast iron tawa or non-stick pan on medium heat. On the other side, add baking soda to the batter and mix.

    11) If your tawa is pre seasoned then no need to drizzel oil. But if using non stick pan then drizzle a teaspoon of oil into hot pan. Take ladleful of batter and pour onto the tawa.

    12) Let it flow itself. The thickness should be medium.

    13) Now sprinkle the veggies on top.

    14) Drizzle the oil on top and around the edges and let it cook till bottom side is cooked and light brown in color. Make sure to cook uttapam on MEDIUM-LOW heat.

    15) Once cooked flip and cook the other side similarly.

    16) I like the slightly crisp uttapam. So i flipped again and let it cook for couple of minute or till bottom gets crisp up little bit. You can skip this and remove it from the pan.

    Repeat the same for rest of the rava uttapam.

    Serving suggestion: Serve sooji uttapam with coconut chutney as a breakfast. To make it a light meal, you can also serve sambar on side.

    Ingredients  

    For rava uttapam recipe:

    • 1 cup Sooji (rava or semolina)
    • Salt to taste
    • ¼ teaspoon black pepper powder
    • 2 teaspoons Ginger paste or freshly grated or crushed
    • ½ cup Plain yogurt Preferably sour
    • 1 cup water
    • ⅛ teaspoon Baking soda
    • Oil for frying uttapams

    For topping:

    • ¾ to 1 cup Chopped vegetables *I have used onion, capsicum, tomato.
    • 2 small Green chilies chopped finely
    • 2 tablespoons Cilantro or coriander leaves finely chopped

    • Add yogurt. Mix well and it will be like a thick paste.
    • Add water. Stir till you get the smooth batter.
    • Cover it and let it rest for 15-20 minutes.
    • Meanwhile let’s prepare the vegetable mixture.
    • Take all the chopped vegetables along with green chilies and coriander leaves in a bowl. Mix well and keep it aside till needed.

    • Now sprinkle the veggies on top.
    • Drizzle the oil on top and around the edges and let it cook on MEDIUM-LOW till bottom side is cooked and light brown in color.
    • Once cooked flip and cook the other side similarly.
    • Once done remove it from the pan.
    • Repeat the same for rest.
