Spinach toast recipe – simple and easy to make breakfast toast. The mixture is made from boiled potatoes, chopped spinach and few spices.

The crispy bread with little spicy, tangy mixture; the best you can ask for. Love the flavor combination and texture. Try it once, you will also love this.

When I have leftover boiled potatoes in the fridge. I make this toast in the breakfast for sure. It gets ready in jiffy. Hubby loves to have it with some ketchup on top.

In the step by step pics, I have made it on the stove top. I have also mentioned the method to make it in the oven.

As one reader suggested in the comments below, you can also make this into sandwiches. Apply butter and green coriander chutney on the bread slices. Use this mixture as a stuffing. Close the sandwich with another bread slice. Toast in the toaster oven or you can grill them on grill pan or grill toaster. Thank you for the wonderful idea.

1) First make the potato-spinach mixture. take boiled, mashed potato in a bowl. Add chopped green chilies.

2) Also add chopped spinach.

3) Mix well.

4) Now add red chili powder, amchur powder, garam masala, chaat masala and salt.

5) Again mix well. Taste the mixture and see if you need to add anything extra.

6) Now spread the mixture on the bread slices. Make sure to make thin layer of the mixture on the bread. If you have made thick layer than bread will stay soggy and won’t get crispy.

7) Repeat the same for all the bread slices.

8) Sprinkle sesame seeds on top and press it slightly using your fingers. So it sticks to the mixture.

Cooking in pan on stove top:

9) Hear the pan on medium-low heat. Once hot add spoonful of butter and let it melt. Swirl the pan, so butter will get spread all over the pan. Now place the bread slices with mixture side down on the hot, buttered pan.

10) Cook on MEDIUM-LOW heat till bottom part gets crispy. Press it very gently using spatula. It will take about 4-5 minutes.

11) Once the bottom side is browned, apply butter using butter knife on the bread. and the flip it.

12) Cook other side as well till it gets crispy and lightly browned. Make sure to toast on low-medium flame to make it nice and crispy, other bread will stay soft.

Baking in the oven:

1) Preheat the oven to 425 degrees F or 220 degrees C. line a baking sheet with aluminum foil.
2) Arrange the prepared bread slices on the baking sheet.
3) Bake into the oven for 10-12 minutes.

Once cooked, remove it to a plate, slice it into triangles and serve warm.

Serving suggestion: Have it as a breakfast or snack. Drizzle some ketchup or green chutney on top. Or have it as such with a cup of tea or coffee.

Ingredients

  • 6 slices Bread
  • Butter or butter spread, as needed
  • 1 medium or ¾ cup Potatoes boiled, peeled and mashed
  • 2 Green chili chopped finely
  • ½ cup Spinach (Palak) washed and chopped
  • ½ teaspoon Amchur powder (Dried mango powder)
  • ½ teaspoon Red chili powder
  • ¼ teaspoon Garam masala
  • ½ teaspoon Chaat masala
  • Salt to taste
  • 1 tablespoon Sesame seeds

Instructions

  • Making the potato-spinach mixture:

    Just wanted to add that this toast can also be made up into sandwiches in a sandwich toaster. I make something similar with Methi ( Fenugreek ) as well as spinach. You can sandwich two slices of bread with the mixture between them – and then toast in the sandwich toaster with a little olive oil or butter. I have used both the stove top toaster and the electric toaster which will automatically slice your sandwich into two, and make two toasted sandwiches at a time. Love your website! Do visit mine…

      If you don’t have oven then toast bread in toaster and then spread chutney and then spinach-potato topping and sesame seeds. Make sure that topping is hot.
