this soup is made with very minimal ingredients. Onion and garlic are sauteed in little olive oil and then pureed with roasted red peppers. After that vegetable stock or water is added to make the soup consistency. Then flavor it up with italian seasoning, salt, pepper and chili flakes. A dash of lemon juice at the end, surely perks up the flavors. The procedure cannot be simpler than this.

Here I have used dried Italian seasoning mix. But if you have any fresh herbs available, use that. Thyme or basil goes perfect with this. Even you can add couple of stalks of parsley as well while grinding. If using fresh herbs add them along with onion, garlic. So it infuses the flavor in the soup.

This is not the creamy soup where heavy cream or sour cream is added. That’s why this is healthy, hearty soup recipe.

I like the taste of red bell pepper, so I use them wherever I can in my cooking like paneer tikkapaneer bhurjikadai vegetablesBroccoli sabzi.

Apart from that I also make roasted red pepper pasta and corn capsicum sandwich.


How to make roasted red pepper soup recipe :

1) Wash the red peppers and wipe it dry. Roast it on open, medium-low flame.

2) Rotate at some intervals and Roast till the skin is blackened from all the sides. Alternately you can roast them in oven as well. For that cut the pepper in half, discard the stem and seeds. Arrange the peppers cut side down in aluminum foil lined baking sheet. Broil it for 15-20 minutes.

3) Let the roasted pepper cool down to touch.

4) Then peel the skin, discard the stem, seeds. and roughly chop them.

5) Now heat the oil in a pan on medium heat. Once hot add chopped onion and garlic.

6) Saute till onions get light pink in color.

7) Now add roasted peppers and saute for 2 minutes.

8) Add water or stock and bring it to a boil.

9) Using the immersion blender, make the smooth puree. In using blender then do this – once onions are cooked, grind them with roasted peppers. Pour the puree into the pan and add water/stock.

10) Now add salt, pepper, italian herb mix and red pepper flakes.

11) Stir well and bring it to a boil and simmer for 2 minutes.

12) Lastly squeeze the lemon juice.

Soup is ready to serve.

Serving suggestion: this healthy rosted red pepper soup can make light meal. Serve with a piece of baguette or toasted bread slice or sandwich. Or serve smaller portion as a starter with few croutons.

Ingredients (1 cup = 240 ml)

  • 2 Red pepper
  • 1 tablespoon olive oil
  • ½ cup Onion chopped
  • 1 clove Garlic chopped
  • 1 ½ cups Vegetable stock or water
  • ½ teaspoon Italian seasoning
  • ¼ teaspoon Red chilli flakes
  • Salt to taste
  • Black peppercorns Freshly crushed, to taste
  • 1 ½ teaspoons Lemon juice
