This suran khichdi is Hindu fasting, vrat recipe where elephant yam is grated and cooked with peanuts. This can be a perfect meal for many Hindu vrats like Navratri, Jaya parvati vrat, Gauri vrat, Ekadashi, Janmashtami, Maha shivratri, Shravana month and so on.
❤️ About This Suran Khichdi Recipe
My mom makes this farali khichdi very often during upvas. But after coming to the USA, I make it very rare. Because I rarely find fresh suran in Indian grocery stores. Whenever I see, I do buy make it along with other suran dishes like suran chips, suran sabzi.
Since very few spices are allowed during vrat, this suran khichdi made with very minimal spices. Still, it tastes too good.
Suran (elephant foot yam) is the kind of root that creates the itchy feeling in your throat if not cooked properly or not combined with the right ingredients.
To prevent itchy feeling, you must add sour ingredients like lemon, tamarind, yogurt, etc. Here lemon is used in this recipe. SO the important ingredient is LEMON JUICE (do not skip).
🧾 Ingredient Notes
Here is the pic of the ingredients used in this suran khichdi recipe. Please check out the notes below I shared.
- Suran: It very rare that I find fresh suran in Indian grocery stores here in the USA. So whenever I find it, I make sure to buy it.
- Cloves and cinnamon: I make a fresh powder using mortar and pestle. Instead, you can go for a quick route and add garam masala.
- Lime juice (or Lemon): It helps to avoid the itchy feeling in your throat.
- Peanuts, sesame and coconut: All these adds a nice nutty flavor and overall improves the taste of the khichdi.
👩🍳 How To Make Suran Khichdi? (Pics)
1) Let’s start by cutting and peeling the elephant yam. Most of the time this gives irritation or itchy feeling to your hands during this process. To avoid that, please grease your hands with little oil and then continue.
2) If not using right away then keep submerged into the water after peeling.
3) Now using the box grater, start grating them.
4) Soak the grated yam into a bowl of salted water for 10-15 minutes. Meantime prep rest of the ingredients.
5) Heat the peanut oil in a pan on medium heat. Once hot add cumin seeds and let them sizzle. Then add sesame seeds.
6) As sesame seeds start to splutter, add crushed peanuts. And saute for a minute or till they are lightly roasted and get light brown color.
7) Now discard the soaking water from grated suran. Add that to the pan and sprinkle rock salt. Mix and let it cook for 5-6 minutes or till yam gets soft (but not mushy).
8) While yam is cooking, take cloves and piece of cinnamon stick, make a powder using mortar and pestle.
9) Add that powder to the cooked yam.
10) Also, add sugar and lemon juice.
11) Lastly, add desiccated coconut and chopped cilantro leaves.
12) Stir well and it is ready to serve.
💭 Expert Tips For Perfect Suran Khichdi
I prefer the mild version of this khichdi, but if you want to add some spicy flavor then add chopped green chili after adding sesame seeds.
Lemon juice is must here. It helps to prevent the ichy or irritating feeling in your throat.
VARIATION: You can use an equal amount of grated yam and grated potato. Or make the same dish with only grated potatoes.
Serving suggestion: Serve this khichdi as such during the Navratri vrat or fasting days. This also tastes good with plain yogurt, farali raita, or farali kadhi.
