Aloo Tikki Chole Chaat
Aloo tikki chole recipe – This is North Indian chaat recipe. shallow fried potato patties topped with spicy chickpea gravy, green chutney, sweet chutney, yogurt and sev.
Indian chaat recipes are tongue tickling. All chaat recipes have combination of sweet, spicy and tangy flavors. And this aloo tikki chole is one of it. You will taste all these complex flavors in your mouth. Apart from lots of flavors, you will feel many different textures in your mouth. Like crispy sev, refreshing and crunchy onions, soft and mouth melting tikkis. yes it’s like heaven. To get the feel and taste of it, you will have to make it and try it.
Whenever I had aloo tikki chole at restaurants or stalls. Every time it has different taste. Because every stall has their own version of making chole gravy and aloo tikki. These two are the main elements of the dish.
Ingredient Notes:
- Aloo tikki – It has crispy outer layer. and soft inside texture. There are many ways of making aloo tikki. Many makes with only potatoes and spices. While some make stuffed tikki with chana dal mixture. Here I have added few green peas to add some nutrition. But you can skip the peas.
- Punjabi chole – I always use the leftover chole. Once in a while I make extra chole to make this chaat next day. There are three chole recipes on the blog, Punjabi chole, no onion no garlic chole, chole (in pressure cooker). You can choose one. All works fine. Or even you can use your own version of punjabi chole. Make sure to make chole spicy.
- Chutneys – aloo tikki chole is topped with green chutney and meethi chutney. Green chutney is made from coriander leaves or mint leaves or combination of both, green chilies and ginger. This adds spicy flavor to the dish. Meethi chutney is made from tamarind, date and jaggery. It provides the sweet and tangy flavors to the dish.
- Yogurt or dahi – Many prefers to add while many skip it. I like yogurt in my chaat recipes. It gives refreshing and cooling effect in your mouth.
- Onion and tomato – gives fresh and crunchy effect.
- Thin Sev – It is deep fried thin noodles made from besan or gram flour. You can make sev at home. Or buy from the store. I always use nylon sev.
- At the end, you can sprinkle some chaat masala and finely chopped coriander leaves.

Step By Step Photo Instructions:
1) Boil the potatoes in pressure cooker for 2-3 whistles on medium heat. also boil green peas. You can cook peas in microwave for 4-5 minutes as well.
2) Mash the boiled potatoes. add peas in a bowl.
3) Mash both together using potato masher, so everything gets well blended.
4) Add finely chopped green chilies, cilantro, red chili powder, chaat masala and salt.
5) Squeeze fresh lemon juice.
6) Mix everything together.
7) Divide the mixture into 6 equal portions and make patty out of it.
8) Heat the skillet on medium heat for shallow frying. Add few teaspoons of oil. Once oil is medium hot, put the tikkis gently and carefully on the pan.
9) Drizzle some oil on tikki as well. Cook till bottom side is brown and crispy. Once cooked, flip the tikkis using spatula and let it brown other side as well. Remove it to a plate and keep it aside.
10) Warm up the leftover chole in microwave. Also prep other elements for making chaat like onion, tomato, yogurt and both chutneys.
11) Arrange 3 aloo tikki in a plate.
12) Pour 1/2 cup of chole on top and sides.
13) drizzle 1 to 2 tablespoons of green chutney or mint chutney. quantity will depend on the spice level of the chutney.
14) drizzle 1 to 2 tablespoons of tamarind date chutney.
15) Then drizzle 1-2 tablespoons of yogurt.
16) Sprinkle chopped onions.
17) Then also sprinkle chopped tomatoes.
18) Lastly garnish with 2-3 tablespoons of sev. Just for the photo purpose I have used less sev. I sprinkled more sev before serving.
Repeat the same for next plate. Or make two plates simultaneously. Serve aloo tikki chole immediately.

Ingredients
For Aloo Tikki:
- 1 large or ¾ cup Potatoes, boiled, peeled and mashed
- 1/3 cup Green peas, boiled, optional
- 1 Green chili, finely chopped
- 1-2 tablespoons Cilantro or coriander leaves, finely chopped
- ½ teaspoon Red chili powder
- 1 teaspoon Chaat masala
- Salt to taste
- 1 teaspoon Lemon juice
- 1-2 tablespoons Oil, for frying tikkis
For Chaat:
- 1 cup leftover any punjabi chole gravy
- 3-4 tablespoons Green coriander chutney or mint chutney
- 3-4 tablespoons Meethi chutney (tamarind date chutney)
- ¼ cup Plain yogurt, (dahi or curd) whisked till smooth
- ¼ cup Red onion, chopped finely
- ¼ cup Tomato, chopped finely
- 1/3 cup Thin nylon sev
Instructions
