    Sweet corn vada recipe - deep fried patties made from sweet corn, bread and spiced with green chili. Best to enjoy during the monsoon.

    This sweet corn vada is very easy to make. It requires very minimal ingredients. Grated or coarsely ground corn is used here. Pieces of bread slices are also added. It act as a binding agent. We are not using any kind of flour for making vada.

    When the bread is fried, it gets crispy. Hence the vada has crispy texture from outside while soft from inside.

    No dry spices are required to make the corn vada. Only salt and pepper is added. Still it taste so good. With minimal or no spices, you get the flavor and taste of corn at max.

    If you are making this Jain recipe, skip the ginger in the recipe.

    1) Grate the corn or coarsely ground in food processor. Take that into a bowl. Add grated ginger, chopped green chili, cilantro, salt and pepper.

    2) Mix well using spoon.

    3) Add bread pieces.

    4) Mix well. The bread will absorb all the moisture from corn. So it will become thick, so you can easily form the vada.

    5) Take small portion of it, shape into vada or small patty. Shape all of the vada and keep ready on the plate.

    6) Meanwhile heat the oil in a pan on medium heat for deep frying the vada. Once oil is hot, add few vada at a time.

    7) Once it is browned and crispy from one side, flip it and cook other side.

    8) Once it is golden brown from other side as well, remove it using slotted spatula and drain the excess oil.

    9) Remove it to a paper towel lined plate. I was impatient and ate half of one vada.

    10) Corn vada are ready to serve.

    Serving suggestion: Serve with ketchup or green coriander chutney. It can be served as an afternoon snack with a hot cup of tea or coffee.

    Ingredients  

    • ¾ cup Sweet corn kernels grated or coarsely ground
    • ½ inch Ginger grated or 1 teaspoon of ginger paste
    • 2 small Green chili chopped finely
    • Salt to taste
    • 1 teaspoon Black pepper powder
    • 2 tablespoons Cilantro or coriander leaves finely chopped
    • 2 slices Bread cut into small pieces
