    Veg cheese toast sandwich recipe - easy sandwich toast recipe with goodness of cheesy vegetables. My favorite sandwich recipe after veg grilled sandwich.

    When we talk about the Indian style Bombay veg sandwiches, it calls for sliced vegetables. The method is very simple and usual like apply butter, chutney, arrange the vegetable slices and toast or grill. But This is not the case for this veg cheese toast sandwich recipe.

    Instead of slicing the the vegetables, I have finely chopped then. and mixed with boiled, mashed potatoes. To flavor it up, I have used the homemade sandwich masala. You don’t have sandwich masala, I have given the substitution below.

    Also Instead of spreading the chutney on bread, I have mixed the couple of tablespoons of chutney and ketchup into the veggie mixture.

    The addition of cheese makes it more delicious. I have used Yellow american cheese slices. This one is really cheesy and creamy. You can see the pic below. The taste may vary depends in the type of cheese you use.

    1) Take mashed potatoes in a bowl.

    2) Add all chopped veggies (onion, tomato, cucumber, capsicum, green chili and cilantro leaves). Mix well.

    3) Add salt and sandwich masala. NOTE: replace the sandwich masala with ¼ teaspoon garam masala, 1 teaspoon chaat masala, ¼ teaspoon black salt and ¼ teaspoon amchur powder.

    4) Mix well.

    5) Also add green chutney and ketchup.

    6) Stir well.

    7) Take bread slices. I am making two sandwiches because my toaster can accommodate two at a time.

    8) Apply butter on it. I have used olive oil based butter spread.

    9) Take cheese slice and put on the bread. NOTE: Instead of cheese slice, you can use grated cheese as well. If so, mix the grated cheese with veggies mixture and continue.

    10) I have used one cheese slice per sandwich. But I wanted to make cheese+veggies+cheese. So I have teared up the one slice into flour pieces. and arranged two pieces on each bread.

    11) Spread about 2-3 tablespoons of veggie mixture on the one bread slice.

    12) Close the sandwich with another bread slice.

    13) Now toast the sandwiches in the toaster. While they are toasting, assemble two more sandwiches. So you can keep continue making it without break.

    14) Toast as per the your toaster’s manual instructions or till it gets crispy and golden brown.

    Serve the veg cheese sandwiches right away. Otherwise the bread will get soft and soggy. But be careful, inside stuffing may be really hot.

    Serving suggestion: Serve the veg cheese toast sandwich with green coriander chutney or mint chutney or ketchup on side.

    Ingredients  

    For veggie mixture:

    • 1 medium or ⅔ cup Potatoes boiled, peeled and mashed
    • ¼ cup Red onion finely chopped
    • ¼ cup Tomato finely chopped
    • ¼ cup Cucumber finely chopped
    • ¼ cup Capsicum (Green bell pepper) finely chopped
    • 1 Green chili chopped finely
    • 2 tablespoons Cilantro or coriander leaves finely chopped
    • Salt to taste
    • 1 ½ teaspoons Sandwich masala
    • 2 tablespoons Green coriander chutney
    • 2 tablespoons Tomato Ketchup

    For veg cheese sandwiches:

    • 12 slices Bread
    • Butter or butter spread, as required
    • 6 slices Cheese

    Instructions 

    Making the stuffing mixture:

    • Take mashed potatoes in a bowl.
    • Add all chopped veggies and mix well.
    • Add salt and sandwich masala. NOTE: replace the sandwich masala with ¼ teaspoon garam masala, 1 teaspoon chaat masala, ¼ teaspoon black salt and ¼ teaspoon amchur powder.
