Air Fryer Quesadillas

These air fryer quesadillas are crispy, cheesy and so delicious. With just under 10 minutes, you can have a quick lunch or a family-friendly dinner ready to go. What’s even better is that you can customize them to your liking by choosing from a variety of fillings or simply sticking to cheese for a kid-friendly option.

Texture: Perfectly crispy from the outside, cheesy, and gooey from the inside. 

3 ingredients only: These air fryer quesadillas can be prepared easily using only flour tortillas, oil spray, and shredded cheese. 

Easy to make: Usually quesadillas are made in a skillet and you need to keep an eye on it and stay there to flip it at the right time otherwise it may burn. But for the air fryer quesadilla recipe, you just put the timer and when it beeps, flip and cook again. Super easy and you’ll get the same texture and taste.  

Versatile: Stick to the original recipe to make simply kid-friendly cheese quesadillas. Use up your leftovers from the fridge as a filling or use your choice of beans, veggies, or meat filling.

Here is the pic of the ingredients you’ll need to make the best air fryer quesadilla recipe.

  • Flour tortilla: In the USA, usually quesadillas are made with flour tortillas. But traditionally in Mexico, corn tortillas are used. Here I have used flour tortilla but you can use any.
  • Cheese: In American-style cheese quesadilla, usually cheddar or Monterey jack cheese is used. Here I have used cheddar cheese.
    • I recommend grating your own cheese from the block as it melts the best. The ready-shredded pack of cheese has an anti-caking agent coated on it, so it doesn’t melt nicely. 
  • Oil Spay: It gives a nice golden brown color and also helps in making it super crispy.
    • Instead of using a spray, you can brush the olive oil using a pastry brush. 
  • Optional Filling: 
    • Vegetarian: Options are black beans, refried beans, veggie fajita, corn, jalapeno, olives, etc.
    • Non-vegetarian: Chicken, fish, ground beef, pulled pork.
    • Breakfast: scrambled eggs.

👩‍🍳 How To Make Air Fryer Quesadillas? (Pics)

Spray Or Brush With Oil:

1, 2) Take a flour tortilla and spray or brush the oil generously on one side only. You can see how greasy it is in the second pic.

3) Keep the oil side down in the air-fryer basket.

Add Filling:

4) Add filling of your choice (2-4 tablespoons for each tortilla) if using. Then spread cheese (¼ cup for each tortilla) on half the tortilla only.

5) Fold the tortilla in half.

6) Repeat the same for the second one.

7) Place an oven-safe rack on top so it doesn’t open or puff up during the air-frying process.

Air Fry:

8, 9, 10, 11) Air fry at 370°F (190°C) for 4 minutes + flip (place rack on top) + another 4 minutes. It should be golden brown and crispy on both sides. 

NOTE: If stuffed with filling (that is cold from the fridge) then cook for 5 minutes + flip + 4 minutes.

Remove it from the basket and cut it into triangles using a pizza cutter. If not serving right away then keep it on a wire rack so it stays crispy without getting soggy from the bottom.

💭 Tips For Air Fryer Quesadillas

  • Scaling the recipe: If making double or triple the amount then you’ll need to do it in batches. 
  • Brushing or Spraying with oil is a must to get a nice golden brown color as well as a crisp outer layer. So be generous. 
  • No need to preheat the air fryer. Just assemble it in the basket itself and air fry it right away.
  • Use an oven-safe rack to hold the tortilla in place otherwise, it may open up while air-frying or sometimes the tortilla will puff up. So you need something to hold/stick them together. I have seen some using a toothpick, but I find it’s a tedious job vs simply putting a rack on top. 

🥣 Storage Instructions

Leftovers make a great quick snack or lunch as reheating doesn’t take long at all.

  • In the refrigerator: Once it cools down completely, store it in an airtight container for up to 3 days.
  • In the freezer: Wrap the quesadilla pieces in plastic wrap and then aluminum foil. Store in a freezer-safe ziplock bag and it stays good for up to 3 months. 
  • Reheat them in an air fryer at 350°F for 2-3 minutes until they are warm and toasty and the cheese is melted again.
    • If reheated in a microwave then it turns out soft and soggy. 
    • You can reheat it in a skillet on a stovetop as well.
