- Strawberries: I always use fresh, ripe and juicy strawberries. Frozen strawberries work too because we are making a puree out of it to make the batter.
- Applesauce: It is used as an egg replacer here. It also makes the strawberry bread moist.
- Oil: Use flavorless or neutral flavor oil like avocado, sunflower, safflower, canola, vegetable or corn oil.
- Cinnamon: Do not skip it. It adds a nice, cozy flavor to this quick bread.
- Lemon juice: It should be freshly squeezed. The bottled lemon juice won’t give a good taste and texture.
- Lemon zest: It is the outer bright yellow layer of the lemon rind. Use the Microplane zester to get the zest. Make sure not to grate the inner white part of the rind, just grate the yellow part. The white part is bitter and makes the bread slightly on the bitter taste.
- Walnuts: Try with other nuts like pecans, almonds, cashews, etc. You can add chocolate chips if you like.
👩🍳 How To Make Strawberry Bread? (Stepwise)
Prep:
- Preheat the oven to 350°F (180°C) for at least 10 minutes.
- Grease the 9x5x3 inches loaf pan using oil or butter. Or spray it with a cooking oil spray.
Making Fresh Strawberry Bread:
1) Take dry ingredients (all purpose flour, sugar, ground cinnamon, salt, baking soda) along with lemon zest in a large bowl.
2) Whisk it until everything comes together. Keep it aside until needed.
3) Take strawberries and water in a blender.
4) Make a smooth puree.
5) Add remaining wet ingredients (oil, applesauce, lemon juice).
6) Again blitz it until everything is combined.
7) Pour this mixture into the dry flour mixture.
8) Start mixing and folding until a batter just comes together. Do not overmix.
9) Add toasted, chopped walnuts.
10) Fold them into the batter.
11) Pour the batter into the prepared loaf pan, spread it evenly.
12) Bake into the preheated oven for 60-65 minutes. Check by inserting a spaghetti or skewer in the center of the bread and if it comes out clean then the bread is ready. Let the bread cool in the pan for 5 minutes. Then loosen the sides by using a butter knife and invert it on a cooling rack. And let it cool down completely before slicing.

- While folding the flour make sure not to overmix the batter. Otherwise, it won’t rise well and becomes dense, tough bread.
- Always zest the lemon first and then get the juice from it.
- Do not open the oven door in-between the baking process to check otherwise eggless strawberry bread will deflate and sink in the middle.
- Let the bread cool down completely or cool to warm before slicing. If you slice the hot bread then it may fall apart and crumble.

- 1 ½ teaspoon Ground cinnamon

- Lemon zest, from 1 lemon
- 1 ½ cups Strawberries, halved (~ 12 oz)
- 3 tablespoons Water
- ½ cup Oil, flavorless oil e.g. (avocado, canola, corn, vegetable or safflower oil)
- ½ cup Unsweetened Applesauce
- 2 teaspoons Lemon juice, freshly squeezed
- ½ cup Walnuts, toasted and chopped

Any options for Apple sauce? Can it be made at home?
No substitute for applesauce.
But you can make at home. Peel and cut the apples into small pieces, add some water and boil until apples are soft. Puree the cooked apples into the blender until smooth.
Can I use frozen strawberries instead of fresh?
