Eggless strawberry bread recipe - This is also a vegan bread recipe. It has soft, moist and bread like texture.
(Eggless, Vegan) strawberry bread recipe
Ingredients
- 2 ½ cups All purpose flour (Maida)
- 1 cup White granulated sugar
- 1 ½ teaspoons Ground cinnamon
- ¾ teaspoon Baking soda
- ¼ teaspoon Salt
- Lemon Zest from 1 lemon
- 1 ½ cups Strawberries halved
- 3 tablespoons Water
- ½ cup Oil use flavorless oil like canola, corn, vegetable, safflower oil
- ½ cup Unsweetened Applesauce **
- 2 teaspoon Lemon juice freshly squeezed
- ½ cup Walnuts or pecans, toasted and chopped
Instructions
- Preheat the oven to 350 degrees F or 180 degree C.
- Grease 9x5x3 inch loaf pan with butter or oil. Or you can spray with cooking oil too.
- Take all purpose flour, sugar, ground cinnamon, baking soda and salt in a bowl. Mix well.
- Zest the whole lemon directly into flour mixture. Mix it and keep it aside.
- Take strawberries and 3 tablespoons of water in blender. Blend it into a smooth puree.
- Add oil, applesauce and lemon juice. And blend it till combined.
- Add wet mixture into dry ingredients.
- Stir it to mix till incorporated well.
- Add chopped walnuts. And fold them in.
- Pour into greased loaf pan. Even out with back of the spoon.
- Bake into preheated oven for 60-65 minutes. Check by inserting a toothpick in the center of the loaf, if it should come out clean.
- Remove it from oven and let it cool in pan for 10 minutes.
- Then remove it on cooling rack and let it cool completely before you slice.

Here I have used applesauce as an egg replacer. This provides the moistness and also gives the lift to the bread while baking. You will not taste the applesauce at all in the recipe.
Traditionally it says that strawberry season is from June to August and it’s about to end. So I thought of making this delicious bread.
I had tried so many other strawberry bread recipes and all of them required chopped berries. Recently I came through this recipe. In this pureed strawberries are added. So the difference is with chopped one you get strawberry flavor here and there, but with pureed one you will get berry flavor in each and every bite.
Addition of nuts is optional. I like crunch in my baked goodies, so I prefer adding some nuts.
Alternately you can add chocolate chips too.
How to make eggless strawberry bread :
1) Preheat the oven to 350 degrees F or 180 degree C. Grease 9x5x3 inch loaf pan with butter or oil. Or you can spray with cooking oil too.
2) Take all purpose flour, sugar, ground cinnamon, baking soda and salt in a bowl.
3) Mix well. Zest the whole lemon directly into flour mixture. Make sure to grate only yellow outer part and not white part. Because the white part gives the bitterness.
4) Mix it and keep it aside.
5) Take strawberries and 3 tablespoons of water in blender.
6) Blend it into a smooth puree.
7) Add oil.
8) Add applesauce.
9) And finally add lemon juice.
10) And blend it till combined.
11) Add wet mixture into dry ingredients.
12) Stir it to mix till incorporated well. Do not over mix otherwise bread will become tough.
13) Add chopped walnuts.
14) And fold them in.
15) Pour into greased loaf pan. Even out with back of the spoon.
16) Bake into preheated oven for 60-65 minutes. Check by inserting a toothpick in the center of the loaf, if it should come out clean.
17) Remove it from oven and let it cool in pan for 10 minutes. Then remove it on cooling rack and let it cool completely before you slice.
Serving suggestion: Serve a slice of it as a breakfast or as an afternoon snack with tea or coffee. It can be served as a dessert with a dollop of whipped cream.
Hi. I don’t have strawberries. But I have loads of strawberry applesauce.
Pls guide. How I can replace the puréed strawberries and how much of strawberry applesauce I can add in total to equal the blended strawberries and applesauce together?

1 1/4 cups strawberry applesauce.
Do not add 3 tablespoons of water at the beginning. Just mix the batter and see if it needs water or not
