    • White sweet corn: white sweet corn is sweeter than its yellow counterpart. You can, however, use yellow sweet corn as well. I've opted for a frozen bag of white sweet corn, but canned sweet corn is also a good option.
    • Poblano Pepper: A large roasted poblano pepper brings a mild heat and smoky undertone to the salsa, enhancing its depth of flavor.
    • Jalapeno and red onion: A small jalapeno adds a spicy kick to this salsa. Red onion provides a sharp and tangy contrast, balancing out the sweetness of the corn.
    • Cilantro: cilantro or coriander adds freshness, herby aroma, and a pop of green.

    Roast Poblano Pepper:

    1, 2) On an open flame, roast the pepper until charred. Keep on rotating it so that it gets char evenly.

    3) Place in a bowl, cover with plastic wrap and let it sit for 5-10 minutes. It helps in easier peeling the skin.

    4) Uncover the bowl and peel the pepper.

    Ingredients  

    • 12 oz White sweet corn ~ 2 cups
    • 1 large Poblano Pepper
    • 1 small Jalapeno ~ 2-3 tablespoons finely chopped
    • ½ cup Red onion finely chopped
    • 1 teaspoon Salt or to taste
    • ¼ cup Cilantro or coriander leaves finely chopped
    • 1 tablespoon Lime juice freshly squeezed
