    Matki usal recipe

    Matki usal recipe - a Maharashtrian dish made with sprouted moth beans, boiled potato and some spices. This beans preparation is very popular and common in the region of Maharashtra.

    Matki chi usal has semi dry gravy. But if you want more gravy than add some more water and mash few beans to make the gravy thick.

    Moth beans are high in proteins. So this is the best recipe for vegetarians like me. This usal is made from sprouted matki. But I do use matki without sprouting to make the simple, home style moth beans curry once in awhile.

    If you are vegetarian or not but looking for good source of protein, I would highly suggest having this beans in any form.

    1) Wash the moth beans under running cold water till water runs clear.

    2) Soak the beans in enough water for 8 hours or overnight.

    3) This is how it looks after 8 hours (middle left pic)

    4) Drain the water and take beans in the damp cloth or man’s handkerchief.

    5) Tie up the cloth and keep upside down in the bowl. Cover the bowl. Keep it in the warm and dark place for one day.

    6) Within one day it will get sprouted well.

    7) Again wash the sprouted beans.

    8) Take into the pressure cooker with 1 small potato. Add 2 ½ cups of water and a pinch of turmeric powder. Cover with lid, put the weight on and turn the heat on medium.

    9) Pressure cook it on medium heat for 1 whistle. Let the pressure go down by itself and open the lid.

    10) Take out the boiled potato and drain the beans. Cut the potato into small cubes.

    11) Heat the oil in a pan on medium heat. Once hot add mustard seeds and let them pop.

    12) Then saute in curry leaves for few seconds.

    13) Add onions and sprinkle some salt to speed up the cooking process.

    14) Cook it till onions get light brown and soft.

    15) Add ginger paste and garlic paste.

    16) Mix and cook for a minute or till the raw smell goes away.

    17) Add Red chili powder and goda masala.

    18) Mix well and cook for a minute.

    19) Add boiled and cubed potato.

    20) Add boiled moth beans and ½ cup of water.

    21) Mix well and let it simmer for 4-5 minutes.

    22) Squeeze some lemon juice and serve, almost all the water will get absorbed and it will be semi dry subzi.

    Ingredients  

    For pressure cooking:

    • ½ cup Moth beans (matki) will give 2 cups sprouted beans
    • 1 small Potatoes
    • 2 ½ cups Water
    • ¼ teaspoon Turmeric powder

    For matki usal recipe:

    • 1 ½ tablespoons Oil
    • ½ teaspoon Mustard seeds
    • a pinch Hing (Asafoetida)
    • 5-6 Curry leaves
    • 1 cup Red onion finely chopped
    • 2 teaspoons Ginger paste or freshly grated or crushed
    • 2 teaspoons Garlic paste or freshly grated
    • Salt to taste
    • 2 teaspoons Red chili powder
    • 2 teaspoons Goda masala
    • ½ cup Water
    • 2 teaspoons Lemon juice

    Instructions 

    Making matki sprouts:

    • Wash the sprouted beans well.
    • Take into the pressure cooker with 1 small potato.

    • Pressure cook it on medium heat for 1 whistle.

    • Peel the potato and cut into small cubes.

    Making matki usal:

    • Saute ginger paste and garlic paste for a minute or till the raw smell goes away.
    • Add Red chili powder and goda masala. Mix well and cook for a minute.
    • Add cubed potato, moth beans and ½ cup of water.
    • Mix well and let it simmer for 4-5 minutes.
    • Squeeze some lemon juice.
    • Turn off the stove

      Hi, is it necessary to drain the beans after boiling? Can I cook it in less water?

        This recipe is supposed to be semi-dry. If you like gravy then no need to drain. Use the cooking water to make the gravy.
        Or you can use less water while cooking, But there should be enough water that beans are submerged into the water. Otherwise they worn't cook fully.

      Ohh my goodness, this sounds sooo good Would this work with mung beans, or sprouted lentils? I have not heard of moth beans before. I love the seasonings in this recipe - delicious!
