There are many different kind of paratha recipes. Many verities like tawa, ajwain or jeera paratha etc are usually served with curry (gravy dishes) or dal as a meal. While other stuffed version are served as a breakfast with yogurt, pickle or raita. Many times I do serve them as a light dinner or brunch. Other simple, not stuffed verities can be served with tea or coffee as a breakfast.
In short, this can be served on different occasions with different sides. It depends on the personal preferences.
Rolling the paratha and frying them simultaneously takes practice. I can manage to do so but if you are beginner then it may take some time to get the speed. Meantime you can roll 5-6 paratha at time and fry them later. Then again roll few and fry.
Paratha recipes are more popular in North India. The real paratha are fried in good amount of ghee or oil. But in this modern lifestyle and many health conscious people do not prefer that much amount of fat. But of course you can use less amount of ghee/oil and make delicious parathas.

Stuffed Paratha Recipes
Aloo paratha – The most popular paratha from Punjab where spicy potato stuffing is used. | Paneer paratha – Another popular one from North India with spicy paneer filling |
Gobi paratha – Again one more from from Punjab or North India where grated cauliflower is cooked with few spices to make stuffing. | Mooli paratha – Perfect for winter season when mooli is easily available. |
